I love a wrap for lunch, they are so easy to throw together and a perfect option for school lunches. Recently, I have been making wraps a lot because it’s summer vacation and I am taking care of both my rascals. Offering up a wrap is almost always a winner with our eldest son, who loves the variety you can enjoy with them. For this black bean wrap, I decided to use a few new ingredients we have discovered recently, so I thought I would share them here.
This soyganic smoked Tofu by Sunrise Soya Foods is amazing. For any recovering cheese addicts, the texture and flavor is very similar to that of smoked cheese. The firmness of the tofu makes it perfect for sandwiches and wraps. Soyganic are a Vancouver (Canada) based company, so I am not sure about availability in America and beyond? Let us know if you find and try it, or perhaps you have something similar where you live?
So, most people might already know that Hellman’s have a vegan mayonnaise on the shelf, but I was unaware of this until a few months ago. In my opinion, it tastes better than the original and it really helps just take away some of the dryness of the mixed kale salad. If you have never tried it, give it a shot and let us know what you think. Also, if you can’t find this locally you can order from these Amazon links: Canada | USA | UK (sorry, nothing online, try a local supermarket and let us know. If they don’t have it, ask the store manager if they can start stocking it)
Our local Joe’s Market grocery store here in Tsawwassen had various flavors of this Braswell’s vinaigrette. I used the Balsamic Herb flavor, it is delicious and was perfect to go with the bean and tofu wrap. Some variety’s have honey so be careful and check. Before I turned to a plant based diet I must admit to enjoying a coronation chicken sandwich every so often. So, I was really pleased to discover this Lantana Sriracha Carrot hummus in Thrifty Foods which reminded me very much of that very taste. For those of you who don’t know, coronation chicken is a sweet, curried chicken mixture that you get from the deli counter. Lantana is based in Austin, Texas, here is a link to the website so you can see the range of products.
I understand that depending on where you live in the world you might not be able to get these products. But don’t worry, be creative, this recipe is just to give you an idea of the combinations I have used to create a nutritious and delicious black bean wrap.
Vegan Tofu and Black Bean Wrap
Yield 2 Wraps
This vegan tofu and black bean wrap is super quick to make and blow-your-mind delicious! Perfect for a kids school lunch or day trips away.
- 2 wholewheat wraps
- 2 large handfuls of chopped kale salad mix (I was cheeky and bought store prepared)
- 1 tomato chopped
- 1/2 tin pre-cooked black beans, drained and rinsed
- 2 tbsp hummus (Lantana Sriracha Carrot, see above for info)
- 2 tbsp vegan dressing (Hellman's, see above for info)
- 2 tbsp balsamic herb vinaigrette dressing (Braswell’s, see above for info)
- 1/4 packet firm smoked tofu, cubed (Soyganic, see above for info)
- sesame seeds
- pumpkin seeds
- dried cranberry pieces
Quick note.. the amounts listed are just a guide so go crazy, there are no rules in wrap making!
- In a bowl, mix your salad mixture with the dressing, vinaigrette, black beans, pumpkin seeds and dried cranberry pieces.
- Spread the hummus all over the wraps.
- Put two handful's of the salad mixture on each of the wraps.
- Top each wrap with the tofu cubes, chopped tomato's and a dusting of sesame seeds.
- Roll em up, slice in half, admire, devour!
